SALTONSTALL ESTATE was founded in 1998 in a          region which had both the climate and the soils that         would produce the finest quality world class olive oils.     The summer fog burns off mid-day keeping the olive       trees cool during the long hot days, thus allowing slow      maturation of the fruit. During the dry summer months,     irrigation permits the precise amount of water needed      to produce the highest quality olives. Poultry manure,     which is high in phosphorus is incorporated in the soil      at the drip line.
