* The California Olive Oil Council has created the first official  olive oil Panel of Tasters in the United States and it is the only panel recognized by the IOOC in North America. The panel is the first and only officially recognized group in the United Sates to receive certification from  the International Olive Oil Council in Madrid. This recognition was received in  2001.

A formal Panel of Tasters was selected after a rigorous and extensive period of training and testing. The Panel of Tasters ascertains defects as well as  desirable attributes of extra virgin olive oils. The tasters have undergone a training program and complete examinations provided by the IOOC in Madrid  annually to maintain panel recognition. This very gifted team meets an average  of twice each month for the dual purpose of tasting oils for the California Olive Oil Council's Seal Program and for continual training.
